茄汁焗豆与马铃薯蛋 Baked Beans in Tomato Sauce with Potatoes and Eggs


茄汁焗豆与马铃薯蛋甜中微酸,不同食材的配搭,口感丰富多层次,非常下饭,配粥也很合适哦!

用料:
罐头黄豆 1罐
鸡蛋 3粒
马铃薯 4粒
蒜头 5瓣
指天椒 1条
葱 1/2把
番茄酱 1汤匙
苹果醋或柠檬汁 2汤匙
盐 1/3茶匙
植物油 1汤勺


详细步骤:
1. 马铃薯去皮、切丁。
2. 葱头去头尾剥皮,切细。
3. 指天椒去头部籽,切细。
4. 蛋液打散。
5. 打开罐头茄汁焗豆,取出备用。
6. 烧热油,加入蛋液。
7. 煎至两面呈金黄色后,平均撒上细盐,然后分割四分。
8. 烧热油,加入马铃薯丁,煎至两面都呈金黄色,取出备用。
9. 烧热油,加入葱头和指天椒,爆香。
10. 加入焗豆和马铃薯丁,略翻炒均匀。
11. 把鸡蛋切长条状,加入平底锅中,翻炒均匀。
12. 加入番茄酱与醋,再次翻炒均匀即可。
13. 盛入碟子,撒上葱花,趁热享用。

小提示:
1. 不同牌子的罐头黄豆,甜度不一样,醋或柠檬汁的分量可自行调整。

2 eggs 
2 potatoes 
1 shallot 
1 Bird's Eye Chili 
1 spring onion (scallion) 
1 tablespoon of chili sauce 
2 tablespoons of vinegar or lemon juice
A pinch of salt 
4 ladleful's of vegetable oil

Steps:
1. Peel and dice the potatoes.
2. Trim and peel the scallions, then chop finely.
3. Remove the stem and seeds from the chili pepper, then chop it finely.
4. Beat the egg mixture.
5. Open the canned tomato sauce and set it aside.
6. Heat the oil and add the beaten egg mixture.
7. Fry until both sides are golden brown, then evenly sprinkle with a pinch of salt and divide into four portions.
8. Heat the oil, add the diced potatoes, fry until both sides are golden brown, then remove and set aside.
9. Heat the oil, add the scallions and Bird's Eye chili, and sauté until fragrant.
10. Add the baked beans and diced potatoes, and stir-fry briefly to mix evenly.
11. Cut the fried eggs into long strips and add them to the pan, toss well.
12. Add tomato sauce and vinegar, and stir-fry again until well combined.
13. Transfer to a plate, sprinkle with chopped scallions, and enjoy the dish hot.


Quick Tip: Canned soybeans from different brands may have varying levels of sweetness, so you can adjust the amount of vinegar or lemon juice accordingly.
