抹茶燕麦葡萄干曲奇 (The Irresistible Matcha Oatmeal Cookies with Raisins)
复活节假日,让难以抗拒的曲奇香洋溢满室吧!酒渍葡萄干曲奇外脆里松软,配搭一杯苦咖啡,或是冲泡一壶热茶,就是幸福满满的下午茶;装进罐子,贴上小字条,也适合当个温馨小礼品。
Ingredients 用料:
(Makes about 22 cookies 约22个曲奇)
60g raisins 葡萄干60克
*About 150ml sauvignon blanc 约150毫升葡萄酒
100g butter 牛油1200克
150g brown sugar 黄糖150克
1 large egg 全蛋液 1个
60g rolled oats 传统燕麦片60克
140g plain flour 中筋面粉140克
1 1/2 tsp matcha powder 抹茶粉 1 1/2茶匙
1/2 tsp ground cinnamon 肉桂粉 1/2茶匙
1/4 tsp nutmeg powder 豆蔻粉 1/4茶匙
1/2 tsp bicarbonate of soda 苏打粉 1/2茶匙
1 tablespoon fresh milk 鲜奶1汤匙
A pinch of salt 细盐1小撮
Tips 小提示: *or rum or simply warm water 或朗姆酒或温水
1. Oatmeal cookies are often enjoyed for their fluffy, soft and light texture. If you like your cookies even more cake-like in texture, you may replace the plain flour with cake flour.
传统燕麦曲奇的口感一般松软轻盈,好似蛋糕,如果你喜欢口感加倍松软,可以低筋面粉取代中筋面粉。
Or, if you prefer your cookies to be more crunchy and crispy, you can substitute the brown sugar with caster sugar. You can also bake the cookies for longer, but don't allow them to burn.
反之,如果你偏爱曲奇口感香脆,可以细砂糖取代黄糖;也可把烘烤时间稍微加长,但请留意观察,勿把曲奇烤焦。
2. If you do not plan to serve the cookies with black coffee, you may reduce the sugar to 100g. 享用时如不配苦咖啡,也可以减糖至100克。
