芒果藜麦沙拉食谱


Quinoa中文称作藜麦,是健康食材,高蛋白、矿物质丰富。第一次料理藜麦,上网搜查了好些食谱,综合几个有我喜爱食材的食谱,做出的沙拉,好开胃哦!伴侣和我都喜爱。如果时间允许,预先备好这份沙拉,那么开餐品尝时,它更入味!


食材:

(4人份)

小番茄 1盒

芒果 1个

鹰嘴豆(kacang putih) 1/2包

开水 约2升+1 1/2杯

泰国柠檬 1个

海盐 1茶匙

藜麦 1/2杯

香菜 适量

橄榄油 1汤匙


方法:

1. 鹰嘴豆以约2升清水浸泡至少4小时,加1/2茶匙盐煮软,沥干放凉备用。

2. 1/2杯藜麦加1 1/2杯清水煮熟,放凉沥干备用。

3. 芒果去皮切丁、小番茄切成两半、泰国柠檬皮刨丝后,挤出柠檬汁,与所有食材拌匀。


Quinoa Mango Salad Recipe

Rich in fiber, minerals, antioxidants and amino acids, quinoa is a healthy and nutritious food. First time cooking quinoa, recipes online gave me an idea to create my own salad recipe. Combining all the ingredients that I like, its appetizing. If possible, make this salad ahead of time. The longer it sits, the more the flavors marry together.


Ingredients:

(Serving for 4)

1 box cherry tomatoes 

1 large mango 

1/2 packet dried chickpeas

2L + 1/2 cup water 

Juice of 1 lime 

1/2 cup quinoa 

Parsley 

1tsp olive oil 


Steps:

1. Soak the dried chickpeas in 2 liters of water for at least 4 hours. Add 1/2 teaspoon of salt and cook until desired tenderness. Drain and allow them to cool.

2. Combine 1/2 cup quinoa and 1 1/2 cups water, bring to boil and rest the quinoa.

3. Peel and dice the mango, halved the cherry tomatoes. Zest the Thai lime and squeeze the lime juice. Combine together all ingredients.


P/s:以橙汁、黄肉奇异果和小黄瓜,取代泰国柠檬和芒果,也清脆美味。
